Amla are small, round berries with light-green skin that are native to the subtropical South Asian countries of India, Pakistan, and Bangladesh. They have a tough skin, which is actually quite thin with a flesh that is crisp, juicy and tastes sour as well as bitter. You'll find in the center of the berry lies an interesting hexagonal-shaped stone with 6 small seeds.
The grape-like berries are not only used in a variety of recipes, but also highly revered in Ayurvedic medicine.
Amla can be eaten fresh, though the bitter taste is better offset with a sprinkle of salt, so traditionally they're used in India for pickles and chutneys. One of the many greats things about amla is that they have both sweet and savory applications, for example amla murabba is a sweet preserve served with Indian flatbread. Amla are also baked into tarts or the juice used as a flavoring for vinegars and marinades.
